The star enzyme that is able to degrade dietary gluten is called DPP-IV or dipeptidyl peptidase IV. It is a type of protease that breaks down many of the common constituents present in gluten protein. Protease enzymes high in DPP-IV activity help in digesting and utilizing foods containing gluten and casein.*
Other protease enzymes that are recommended for gluten digestion are quickly degraded under the acidity of the stomach. There is not enough time for them to prevent the undigested gluten from reaching the small intestines. DPP-IV survives the high acidity of the stomach long enough to break down the gluten particles.
